🌱 Easy Coconut Chickpea Curry

Ingredients

  • 2–3 tbsp Truly Delicious Foods Original Blend
  • 1 tbsp coconut or avocado oil (or ΒΌ cup water)
  • 1 tbsp curry powder (Jamaican Style)
  • Β½ tbsp ground turmeric (optional)
  • Scotch bonnet pepper or red pepper flakes (optional)
  • Sea salt (to taste)
  • 1 (13 oz) can coconut milk
  • 1 (15.5 oz) can chickpeas, drained and rinsed
    Β Β OR 1ΒΎ cups cooked chickpeas

Instructions

  1. In a medium pan, heat coconut oil or water over medium heat.
  2. Add the Original Blend and stir.
  3. Reduce the heat to medium-low.
  4. Add curry powder and turmeric. Stir for 2–3 minutes.
  5. Stir in the coconut milk.
  6. Add chickpeas, pepper, and salt to taste.
  7. Bring to a boil over medium-high heat, then reduce heat to medium.
  8. Simmer for 15–20 minutes or until thickened.
