🌱 Easy Coconut Chickpea Curry

Ingredients
- 2–3 tbsp Truly Delicious Foods Original Blend
- 1 tbsp coconut or avocado oil (or ÂĽ cup water)
- 1 tbsp curry powder (Jamaican Style)
- ½ tbsp ground turmeric (optional)
- Scotch bonnet pepper or red pepper flakes (optional)
- Sea salt (to taste)
- 1 (13 oz) can coconut milk
- 1 (15.5 oz) can chickpeas, drained and rinsed
  OR 1¾ cups cooked chickpeas
Instructions
- In a medium pan, heat coconut oil or water over medium heat.
- Add the Original Blend and stir.
- Reduce the heat to medium-low.
- Add curry powder and turmeric. Stir for 2–3 minutes.
- Stir in the coconut milk.
- Add chickpeas, pepper, and salt to taste.
- Bring to a boil over medium-high heat, then reduce heat to medium.
- Simmer for 15–20 minutes or until thickened.
