🍲 Old-Fashioned Beef and Beer Stew

Ingredients
- 2–2½ lbs beef chuck roast, cut into 1½-inch cubes
- 2 tbsp olive oil
- 1–2 tsp browning sauce (for color)
- 4 carrots, peeled and cut into 1-inch pieces
- 2 celery stalks, cut into 1-inch pieces
- 1 lb gold or red potatoes, cut into 1-inch cubes
- 2–3 tbsp Truly Delicious Foods Original Blend
- 1 (12 oz) bottle or can of beer (lager or ale)
- 3 cups low-sodium beef broth
- 2 tbsp Worcestershire sauce
- 2 tbsp tomato paste
- ¼ cup all-purpose flour
- Salt and black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
1. Brown the Beef
- Pat beef dry with paper towels and season lightly with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add beef in batches and brown on all sides (2–3 minutes per side).
- Drizzle browning sauce over the beef while searing to enhance the color and flavor.
- Transfer browned beef to your slow cooker.
2. Deglaze the Pan
- Reduce heat to medium. Add Truly Delicious Foods Original Blend and tomato paste to the same pan. Stir for about 1 minute until fragrant.
- Sprinkle in the flour and cook for another minute, stirring constantly.
Slowly pour in the beer, scraping up any brown bits from the bottom. Let simmer for 2–3 minutes.
3. Combine and Cook
- Pour everything into the slow cooker. Add carrots, celery, potatoes, beef broth, and Worcestershire sauce. Stir to combine.
- Cover and cook on Low for 7–8 hours or High for 4–5 hours, until beef is fork-tender and vegetables are cooked through.
4. Thicken and Serve
- If you’d like a thicker stew, remove the lid during the last 30 minutes of cooking to let it reduce.
- Taste and adjust seasoning with salt and pepper.
- Garnish with fresh parsley before serving.

For the best flavor, use a dark beer and let the stew rest for 10 minutes before serving — it allows the sauce to thicken naturally.
