🥦 Vegetable Stir-Fry
Serves: 2–3 | Prep: 5 min | Cook: 10 min
Ingredients
- 1 bag (12–16 oz) prepacked stir-fry vegetables (or your favorites: broccoli, bell peppers, carrots, snap peas, mushrooms, onion, zucchini)
- 1–2 tbsp Truly Delicious Garlic Blend
- 1–2 tbsp coconut oil (or oil of choice)
- Salt to taste (optional)
- 1–2 tbsp water (optional, for light steam)
Optional add-ins
- 1 tbsp soy sauce or coconut aminos
- ½ tsp sesame oil
- Sesame seeds or sliced scallions, for garnish
Directions
- Heat a large skillet or wok over medium-high. Add oil.
- Add vegetables and stir-fry 3–4 minutes until crisp-tender.
- Stir in Truly Delicious Garlic Blend until coated and fragrant (about 30–60 sec).
- Optional: add 1–2 tbsp water, cover, and steam 2–3 minutes to soften.
- Uncover, stir 30–60 sec until glossy. Season with salt to taste.
- Serve hot over rice, quinoa, or noodles. Garnish if desired.
Notes & Variations
- Protein boost: add tofu cubes—cook first, remove, then finish veggies and toss together.
- Saucy version: whisk 1 tbsp coconut aminos + 2 tbsp water; add in step 3.
- Oil-free option: sauté with a splash of water or veggie broth, then finish with ½ tsp sesame oil (optional) off heat.
