Vegan Pumpkin (or Butternut Squash) Soup

Ingredients:
- 2 cups pumpkin or butternut squash purée (fresh or canned, unsweetened)
If using fresh: 1½ lbs peeled, seeded, and cubed pumpkin or butternut squash - 2 cups unsweetened coconut milk (or any plant-based milk)
- 1½ tablespoons Truly Delicious Foods Original Blend
- 1 tablespoon avocado oil (optional, for extra richness)
- ½–1 cup water (to adjust thickness)
- Salt to taste (optional)
Instructions:
If using fresh pumpkin or squash:
- Peel, seed, and cube the pumpkin or squash.
- Boil in water for 10–12 minutes until tender. Drain, leaving about ½ cup of the cooking water. Lightly mash.
If using canned purée:
Skip the boiling — it’s already cooked.
- Add Truly Delicious Foods Original Blend and stir until evenly coated.
- Pour in coconut milk and mix well. Simmer on low heat for 10–12 minutes.
- Add water gradually until you reach your desired consistency.
- Taste and add salt if needed.
Serving Suggestion:
Serve warm with a swirl of coconut milk or a sprinkle of toasted pumpkin seeds (optional).
