Vegan Pumpkin Soup with Toasted Bread and Scallions

Vegan Pumpkin (or Butternut Squash) Soup

Ingredients:

  • 2 cups pumpkin or butternut squash purée (fresh or canned, unsweetened)
    If using fresh: 1½ lbs peeled, seeded, and cubed pumpkin or butternut squash
  • 2 cups unsweetened coconut milk (or any plant-based milk)
  • 1½ tablespoons Truly Delicious Foods Original Blend
  • 1 tablespoon avocado oil (optional, for extra richness)
  • ½–1 cup water (to adjust thickness)
  • Salt to taste (optional)

Instructions:

If using fresh pumpkin or squash:

  1. Peel, seed, and cube the pumpkin or squash.
  2. Boil in water for 10–12 minutes until tender. Drain, leaving about ½ cup of the cooking water. Lightly mash.

If using canned purée:

Skip the boiling — it’s already cooked.

  1. Add Truly Delicious Foods Original Blend and stir until evenly coated.
  2. Pour in coconut milk and mix well. Simmer on low heat for 10–12 minutes.
  3. Add water gradually until you reach your desired consistency.
  4. Taste and add salt if needed.

Serving Suggestion:

Serve warm with a swirl of coconut milk or a sprinkle of toasted pumpkin seeds (optional).
