🍄 Jerk Mushrooms
Ingredients
- 8-10 oz mushrooms (oyster, portobello, or button)
- 1 tbsp Truly Delicious Foods Jerk Seasoning (Mild or Hot)
- 1 cup flour
- ½ cup cornstarch
- Salt to taste
- 1 cup sparkling water or water (or very cold water)
- Oil of choice for frying (avocado, canola, or peanut)
Instructions
- Prep mushrooms: Wipe clean (don’t soak), then slice into thick strips or bite-size pieces.
- Make the dry mix: In a bowl, whisk flour, cornstarch, and 1 tbsp Jerk Seasoning.
- Batter it: Slowly whisk in water until the batter is the texture of thin pancake batter—smooth and clings lightly.
- Heat the oil: Add oil of choice to a heavy skillet to about ¼ inch depth. Heat over medium-high to ~350°F (a drop of batter should sizzle immediately).
- Dip: Working in batches, coat mushrooms in batter, letting excess drip off.
- Fry: Lay mushrooms in the hot oil without crowding. Cook 2–3 minutes per side until golden and crisp.
- Drain: Place fried mushrooms on a paper towel–lined plate to remove excess oil.
- Finish & serve: Garnish with fresh herbs if you like and serve hot.
💡 Pro Tip: For the crispiest coating, use ice-cold sparkling water instead of regular water. The bubbles make the batter light and airy while reducing gluten formation — so your mushrooms fry up crisp, not greasy!
If you don’t have sparkling water, use very cold regular water and avoid overmixing.
For extra crunch, keep the batter cold and the oil hot. If you need to pause, pop the batter in the fridge between batches.
