🌿 Vegan Garlic Pasta
Serves: 2–3 | Prep time: 10 mins | Cook time: 20 mins
Ingredients:
- 8 oz pasta of choice (spaghetti, linguine, or fettuccine)
- 2 tbsp Truly Delicious Foods Garlic Blend
- 1 cup coconut milk (unsweetened)
- ¼ cup vegan parmesan cheese (plus extra for garnish)
- Salt to taste
Directions:
- Cook the pasta:
Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain and set aside, reserving about ¼ cup of pasta water. - Make the sauce:
In a skillet over medium heat, add the Garlic Blend and sauté for 1–2 minutes until fragrant. - Add liquids:
Pour in the coconut milk. Stir well and bring to a gentle simmer - Add cheese and seasoning:
Mix in vegan parmesan and a pinch of salt. Let the sauce thicken for about 5 minutes, stirring occasionally. - Combine pasta and sauce:
Add the cooked pasta to the sauce, tossing until evenly coated. Add a splash of the reserved pasta water if needed for creaminess. - Serve:
Garnish with extra vegan parmesan and a sprinkle of parsley (optional).
